In the early 2010's, Avril Lavigne was a guest on Rachael Ray's former TV show. Avril made her "uncooked chocolate cookies," which are essentially just a no-bake oat cookie. Ray's website associated with the show is no longer online and consequently the recipe webpage has evaporated. Thankfully I copied down the plain text of the recipe back in 2014 and printed it off--great for historical documentation regarding a token of Avril Lavigne history.
Ingredients:
- 1/2 cup vegetable shorting [in the modern era, just use vegan butter]
- 1/2 cup soy milk
- 2 cups sugar
- 3 cups rolled oats
- 1/2 cups plus 1 tablespoon unsweetened baking cocoa
- 1 teaspoon vanilla extract
- Pinch of salt [in the original episode, Avril did not add the pinch of salt; it was Ray who insisted on the addition]
- 1 cup shredded unsweetened coconut (thinly shredded)
In a large pot, mix together shortening, soy milk and sugar, and bring to a boil. Remove from heat and add rolled oats, baking cocoa, vanilla, salt, and coconut. Mix together and spoon onto wax paper.
